Both were named in Brazil's coaching team when he returned to the club three months ago following Gavin Chesterfield's brief reign.
Born and bred in the town, Ellis holds the UEFA 'A' license and has worked within the club's coaching structure for the past thirteen years.
Jones made 240 Welsh Premier appearances for Carmarthen Town and Haverfordwest, making his debut for the Old Gold as a 16-year-old.
Before returning to the Bluebirds, he had managed successfully at Newcastle Emlyn in the Welsh League.
A statement from the New Bridge Meadow says: "The whole management team are now more locally based than ever before and the club hope to develop a strong squad from within the area.
"They also realise the scale of the tasks ahead of them in their quest to regain the club's Welsh Premier status but they are excited at the prospects of working with a more locally based group of players."
