Joachim, who played for the Pilgrims during their Football League days, initially joined the club for pre-season training merely to improve his fitness. But Canoville and joint boss Jason Lee have been so impressed with the 36-year-old, they could offer him terms for the 2011/12 campaign.
Joachim looked sharp during United's 3-3 draw at Arnold Town on Tuesday night and is set to figure again when the Pilgrims visit neighbours Boston Town on Saturday.
"We've been very pleased with Joachim's fitness," said Canoville.
"He asked me and Jason if he could come and train with us to get his fitness back and he was one of the fittest in the squad on the first day.
"Straight away that alerted me and Jason because he's still got quality. You don't lose that quality.
"You maybe lose that little bit of pace, but he still seems to have that. He's looked very sharp in training.
"You could see the other night at Arnold that he's still got the knowhow. So he'll keep training with us and we'll see a bit more of him.
"We're very happy with how he has come back and we've got a decision to make."
Joachim's first spell at York Street ended in 2006 when he joined Darlington in a £100,000 deal.
After leaving the Quakers in 2008 he dropped into non-League, playing for King's Lynn, Quorn, Hinckley United and Holbeach United.
Meanwhile, Canoville and Lee are close to making a decision on some of the club's other triallists, which include former players Liam Parker, Matt Hocking and Jamie Stevens.
The Pilgrims boasted a squad of twenty-two at Arnold, but Canoville has ruled out doing the same at Tattershall Road on Saturday.
"I don't think it's fair to keep people hanging around," added player-boss Canoville, who fielded a different team in each half at Arnold.
"Me and Jason have had a meeting and I'm sure by the end of the week, or by early next week, we'll know who is staying and who is going.
"We'll probably have less numbers at Boston Town so we'll be looking to give the lads a little bit longer.
"That's how you want to play your first game, giving everyone 45 minutes, and then push onto the hour mark.
"On Tuesday, we had two completely different teams in each half. I can't see that happening again on Saturday if I'm honest.
"We want the lads to get a bit more game time."
