Simmonds worked alongside first-team manager Danny Bloor last season and also began this season in the Town dug-out.
The former Brighton, Hastings United and Eastbourne Borough midfielder almost quit Town during the close season but Bloor persuaded Simmonds to continue as his number-two.
However, Simmonds admitted he found the role increasingly difficult and is eager to return to action on the pitch.
First-team playing opportunities were limited for the 37-year-old at the Saffrons and he has been approached by Sussex County League Division One leaders East Preston and a Ryman League side.
Simmonds though is likely to ply his trade closer to home and has already had discussions with Eastbourne United boss Paul Daubeney.
Simmonds said, “I just want to get back and enjoy playing football. I still feel fit enough to do that and I want to play for as long as possible.
“I have spoken to players who have retired and they all say the same thing, which is play while you still can.”
Simmonds added, “It was a tough decision to leave Town. It’s a great club with a great manager and good set of players.
“There was no fall-out between Danny and I. He has been good to me and I have enjoyed working for him. My decision was purely based on wanting to play football once again.”
